What a good beginner's method for 3BLD? I don't wanna start with Old Pochmann cus I feel like that's outdated rn.
You might as well start with M2, it's barely a harder method. Couple things though-

J perms tutorial teaches setup moves that involve rotations, even though they aren't faster. Here are some easier setup moves for some cases-

H- u' L' u (M2) u' L u

E, F and G- Do one L move to setup to H.

N- u R u' (M2) u R' u'

M, P and O- Do one R move to setup to N.

Also here's an optional parity alg which I prefer. Instead of the standard alg, you can just do the setup moves for A D A.

So- M2 L U' L' U M2 U L U L' M2

I'm learning 4BLD(I can do centers now) and am currently learning wings.

I know how to memo wings and how to figure out the number of letters you should be memoing by doing 23- solved pieces + new cycles.

But once I know that I need to do a new cycle, I'm having trouble finding and working out a piece that I haven't yet visited. How do you do this? Thanks!

Sometimes they are really hard to find. My "approach" is, that I have easy pieces (about 4 or 5) to start new cycles with (or these are pieces that are nice to end up in parity - like the piece beside the buffer). And while I go through the memoing, I normally notice, when one of these appears in the memo (it is like a "Oh damned, the J is gone for new cycles") - and I can find out in the end pretty fast which one must be left. In most of the cases there is one of my favourite pieces left, so this often works.
And somehow I know pretty good, whether I have memoed all the wings M-slice - perhaps because they were not at all my favourite ones, when I solved piece by piece.
That means: some pieces are more important for me and therefore I have automatic an eye on them.

Again to parity, maybe something else for you, too: when I know, my actual count is even, say: 22, and I have to start a new cycle (22+1=23), then I take a wing, that would be nice in parity.

So I've attempted 4BLD twice, with a strategy I found on Jack Cai's tutorial. When I memo wings, I place my finger on each wing I memo(not on the specific piece, but just on the pair of wings), and take my finger off when I've memoed both pieces on that wing. When I take my finger off, I add the letter from that piece into a separate piece of memo. This way, I know at the end which wings my finger isn't on because I haven’t been there, and which wings my finger isn't on because I've been there twice.

Previously, I've done some centers only attempts with 2 successes. I've also done some wing only attempts with no successes but off by about 5 wings so I figured I could give the whole thing a go.

I did 2 4BLD attempts, and on average I was off by about 12 centers, 11 wings and 5 corners(not exact). In addition, my attempts take about 27 minutes, which is ridiculous considering I average sub 1 on 3BLD. I went back over my first attempt(only had time for centers), and can confirm that I made a mistake during center memo.

Is there likely a consistent mistake I am doing, and what should I be doing to try to get a success?

It is good that you are using finger tapping to keep track of wings. Wings are the hardest piece to trace out and optimize.

I would suggest trying to do sighted exec on your 4x4 to get the execution flawless in the first place. Considering you are ~1 min on 3BLD, this should be easier to get started with.

In your DNF off by 12 centers, 11 wings and 5 corners(not exact), I am guessing there was a face turn overshoot or a slice mistake causing these many unsolved pieces.
