Hmm, the typical sub-15 cuber would probably take around 30s per cube. (scramble + inspect + solve).

5000 minutes (83 hours) dedicated to solving is doable. Seeing as there should be at least 6720 minutes (112 hours) of awake time.

That would still be pretty epic, but definitely much more doable. 1000 cubes every 3 days would not be too unreasonable.

I think if I went for it I would miss some quality family time with my wife and kids.

Yeah, it does seem feasible. I do about 200 a day, so it won't be that much more than usual.
