So I guess I'm wondering how to break the sub-1:00 times, and get consistent times ranging in the 40 second area. Thanks!

Learn more F2L cases.
My best guess is that you only know a few F2L cases. They are
a lot of F2L cases to learn. You can view my YouTube
video for that.
You need to master these cases until you know them VERY well.

Remove cube rotations, solve form all angles
Learn how to do F2L from all angles. That means without having to rotate and re-grip the cube. When youa re comfortable enough with the F2L cases above you will realize how to execute them from different angles.

Learn 2-Look OLL and 2-look PLL
It's 2+7 algorithms for OLL and around 5 algorithms for PLL.
You need to practice them to the point that you can preform them by muslce memory alone.
This alone will be able to drop your solves to sub-40

Learn Look-Ahead
Learn how to solve the F2L pieces while simontaniously planning your next move. More on that
here. You can only achieve this after you have mastered the F2L cases *AND* being able to solve them form all angles.
* Learn Full PLL
This is not as a big step as you think.
If you follow all these steps you should e well under sub-30, almost near sub-20
