Easy to solve isn't really a thing you can do (although there may be some software out there for that). I don't think you should be going for easy though. There are only 8 corners on a cube, and it's good to practice doing all of them. If you want to have some solved though, I'd recommend just doing a normal scramble, solving edges, and solving a couple corners throughout your edge-solve (like during F2L maybe).

Yeah "easy" doesn't really help. If you're struggling with your method, do sighted solves. If you're struggling with your memo, just solve a few pieces at a time and peek at the cube in between. For corners you could memo and execute four, then look at the cube, check you did it right, then memo/exec the rest.
