That's a difficult question to answer! There's so many really complex sticker mods. Here are some that you may find interesting:
Turbull Tartan
Soccerball 3x3x3 2
Graph Cube 3x3x3
Holstein (Cow Print) Cube
The ones below aren't really sticker mod as they are painted, but the designs are really complex (and in terms of solving, they could be considered "sticker mods":

Aside from these, there are sooo much more! I recommend visiting the Twisty Puzzles museum to see more puzzles.
Depends on how you define complexity. Dodo cube can be perceived as both complex and for dummies.
