(...and why?)

3x3x5 - The jumbling is cool and it has a couple distinct phases to the solve which is interesting. Also the witeden puzzle is just really nice out of the box.

Mirror blocks - It's easy and just a nice variation on the 3x3.

Gear ball - Just a very solidly put together puzzle that's fun to mess with.

I know my top three will change as I get better at cube puzzles in general and my collection expands, but here they lie for now.

Here are my top three:
  1. 2x2x3 (Very easy to solve and very fun)
  2. 3x3x5 (a bit more challenging but i can consistently get under 1:30)
  3. Dino Cube (also very fun)
I don't think I will be getting more non-WCA puzzles anytime soon, since I'm really into 3x3 atm.

Ooh great question! I love non-WCA puzzles; how to limit it to three?!
In no particular order...

Hexaminx; I love dodecahedrons in general but the shapeshifting and working out which piece is which really melts the mind.

3x3x5; as OP states above and just a really cool cuboid that's not too hard to solve.

Dayan Bermuda Neptune; I have an unhealthy love for all the Bermuda cubes and this is my personal favourite.
