Why does the ukca not have a Welsh and notherm Ireland champ too

No need for a Welsh champs.

UK Champs is slap bang in the middle of the UK in Birmingham so that every country and county (except Northern Ireland) in the UK won't have to travel too far.

As for Northern Ireland, its easy to forget that it exists

There isn't enough demand for that, we haven't had any competitions in Wales for a long time, there might be plans for something but there is no point in calling it Welsh championships.
Although I heard that one pre-covid Welsh cubing competition was held in some primary school in Wales and one of the teachers insisted started calling it Welsh championship and made stuff calling it such around the school, apparently the venue had a lot of issues though that have prevented any more competitions being held there
