In CFOP: F2L. It's a lot of quick thinking and reactions.
Overall: either Roux second block (it's like F2L, just more free) or LSE (very intuitive but very powerful)

Cross leading into the first part of F2L is definitely my favorite. I do X-cross or pseudo-cross solves a lot, and I love planning them during inspection. I really enjoy finding a short, not-so-obvious X-cross solution, or a sexy pseudo-cross solve. F2L is pretty fun, but not as fun as the "Aha!" moment of spotting a nice X-cross just before setting the cube down and starting.

Least favorite would probably be OLL. I like OLL ok, but I have a larger percentage of my OLLs that are slower than I would like than PLLs that are slower than I would like.

Overall, ZZF2L. RUL is pretty sexy. For CFOP, I'd have to go with last slot -> last layer. There's just so much you can do.
