It makes it..weirder. Hard to say. I prefer a bit more control in my cube since I tend to lockup on fast cubes so the elite is good.
Elites still semi sorta fast..but the mod definately has an impacton speed.
My preference makes me like elite more then ultimate. Less lockups.

Here's another opinion from someone who has tried the Elite and the Ultimate (I own the Ultimate myself)
The Elite and Ultimate are awesome cubes. The thing about the Elite though is that you're paying almost double price for a cube that is just a bit better in certain aspects.
Getting the Elite isn't going to somehow drop your times significantly. If you particularly like a very smooth cube with little
to no clickyness when it turns, then the Elite is good for that. I myself actually quite like a tiny bit of clickyness, it feels good to me, which is why I use my regular Guhong more than my Ultimate.
In my opinion, I would go for the Ultimate, because you're getting a cube that has tensions set up well, and pre-lubed with the best lube out there. Buy some extra Lubix too, because you're going to want to wash your cube out and re-lube at some point.

Are the Elites and Ultimates made out of POM, or are they made from plain old ABS?

They're modded Guhongs so it would be the same plastic as a regular guhong, which I believe is ABS, but please don't hold it against me if I'm wrong.
