A little off topic...but if I know how to solve a 4x4, do I pretty much know how to solve a 5x5, 6x6, and 7x7 as well?

If you know how to solve a 4x4 you know all the algorithms needed to to sovle any sized cube. Just play around with it, you'll get it.

I'm not sure if that's true. There is one algorithm for the 5x5 that I had to learn to solve that I didn't learn from the 4x4.
On the last two edge segments if you only need to switch out two edges:
L'* 2U L'* 2U 2F L'* 2F R* 2U R'* 2U 2L*
(The eighth animation on this page: http://bigcubes.com/5x5x5/lastedges.html)
That same algorithm is applicable on the 7x7 edges.

I'm having quite a bit of trouble with the centers on these bigger cubes...
I must be dumb.

No, not at all. It can be quite tricky in the beginning.
But once you got it, it pretty easy and fast.

Grab yourself a solved 5x5 and do:
Rw R' U'
Lw' L U
Rw' R U'
Lw L' U
To exchange these two pieces, you do
F (then the alg above) and F'
Hope you saw what you need to do.
Note: the F is only to put the two centre pieces in the same position on the centre and the last U and the F' are just to restore everything, don't bother about these in an actual solve.
ok, i hope this made sense.
if there are any questions, don't hesitate
btw: i think this is a simple commutator, but i'm not sure.
