I can't seem to get below a 12 minute average for the 6x6, a 20 minute average for the 7x7 and my 11x11 takes me over 1hr30min to solve.
Any tips for solving centers or edge pairing?
And how do you use finger tricks for larger cubes?
Thanks!

for centers me advice would be tu turn fast, because there is no special racongnition involved, you just have tu recongnize 1 sticker

At this point it really is just practice. Those were my exact times when I first started doing big cubes. I still haven't practiced them much, but now I am down to ~6 minutes 6x6 and ~10 minutes 7x7 and I didn't learn any thing new.
For centers I try to turn as fast as I can.
Finger tricks feel awkward at first, but will come after more practice.

When the cube is larger, there turn speed becomes more important than look ahead. For 4x4, look a head is very very important. For 5x5 look ahead and fast tuning is even. 6 and 7 turn speed is the most important. Centers need to be the fastest. Over 50% of the solve is centers for 7x7 (I think).

It is for me

Anyway, overall I agree with the above post. That doesn't mean don't lookahead at all, because you still need to with all the different types (orbits?) of center pieces, but you do need to turn as fast as you can while still looking ahead somewhat reasonably.
