I don't think jello and liquid nitrogen is your best bet. Potatoes or some other root vegetable might be a good medium, and you could carve a lot of things out of hard candy/sugar.

Where are we going to get the liquid nitrogen though?
I have a couple gallons, but none I can spare. That's a good argument for a naturally firmer food, like potatoes or carrots. If you're not worried about any functionality then ice cream or even cake would work ok. It's not generally considered edible, but I've been wanting to make a solid wood cube, including a wooden mechanism.
