I'd like to get a 1x1 WR single. I've gotten it unofficially on multiple occasions, but sadly I've never been able to replicate those results officially. At least I have the WR average.

I would say Matty Hiroto Inaba for 3x3 as he +2ed out of the first sub 5 average and unfortunately doesn't get too many competitions.
I also kind of want Seung Hyuk Nahm to get a big cube WR as he has over 50 AsRs but never got a WR despite being one of the best in the world at big cubes.

I'd love if Ciarán Beahan got a big cube world record. He's an amazing cuber from my home country and he's been world class for so long in big cubes. I think he has stopped cubing as much though. ( He is going to Worlds in August ).
