This problem is more prevalent in execution than memorization for me.

Due to me not counting or assigning pack number + cube number in some memory palaces, there is a chance I may skip a room due to lapse of concentration.

For the time being to avoid this, I spend few seconds verifying the cube number and my locus for it, when I start memoing/reviewing or executing the cube. I guess it is a good solution until I fully get used to my new palaces, but it does consume extra time.

Any hacks or tricks to bring consistency in traversing palaces and not skipping rooms?

Do you mean when jumping around? I can imagine it being difficult to get to the correct room when picking an arbitrary section of the table.

Back when I was trying to do 6BLD, or when memorizing cards, the POV of my palace in my head was from a disembodied camera, that would zoom around quickly when moving from one room to the next—for example, when going from my bathroom to the kitchen, I would imagine zooming downstairs, which takes only a moment to do. The problem of skipping a room never popped up because I would have to zoom around the whole kitchen before I would reach the sitting room, and I would catch myself before that. Maybe this method could help you, unless there's something I'm missing.
