Firmware updates always pose a small chance of bricking. There are steps to reduce the possibility of bricking such as having a well-powered cube & phone and turning off the phone's main radio and home networking so there can be no interruptions.
That would be a big project but there may be some academic interest in seeing how algs have evolved over time. Particularly as computer processing power improved and the popularity of the cube ebbed and flowed.

To clarify, today I want to practice only 8 specific algs (which I pick in the morning). So I would like to tell the robot to just keep testing only those 8 algs today, and randomly scramble just those 8 algs today.

I don't have the 356i but have battled general bluetooth glitchiness. Bluetooth is not the most stable IME.
To start, you can try turning off your phone completely. You can try a different phone also. You can also try to reload the Gan app.
